Shakshouka with Zucchini

Shakshouka with Zucchini.Here is another idea for light and easy meal. The recipe was provided by Ilana on forums, but since it’s there in Russian, I’ll still post my version of it.

I used:
  • 2 small onions
  • 3 garlic cloves
  • 2 carrots (will reduce to 1 next time)
  • 1 red bell pepper
  • 4 tomatoes, skin removed
  • 2 small zucchini
  • 1 tablespoon of tomato souse (I used ketchup)
  • 6 eggs
  • salt
  • pepper (I used hot pepper flakes and some cayenne)
  • 1 teaspoon of sugar
  • olive oil
  • your favorite spices (I added 1.5 teaspoons of cumin)

The whole process is extremely easy. Cube onions, start frying in a bit of olive oil; in the meantime chop garlic into small pieces. Add garlic to onions, continue frying, in the meantime peel and slice carrots into thin pieces. Add to the pan, continue frying on low heat, in the meantime cut bell pepper. Add pepper to the pan, continue frying, in the meantime cut zucchini (don’t peel the skin), add to the pan. Then blanch and cut tomatoes, add them to the pan as well. Add salt, pepper, sugar, ketchup and whatever other spices you like. Stir, fry for just a little bit until vegetables a about half ready.

Put vegetables into casserole or any other cookware you use for the oven. Make a couple of holes in vegetables and place raw eggs in them. Put the dish into preheated oven and bake for 10-20 minutes. Serve with white bread.

This was almost effortless, quite healthy and tasted good. I’ll cook this again in the future.
