Pork Chops & Green Beans Salad

Pork Chops & Green Beans Salad.What I like about this meal idea is that it can be easily cooked on a week day, but it is still sophisticated enough for a weekend special. I did not use any recipe for pork chops, but rather added ingredients based on common sense. The salad idea was taken from one of the wonderful cooks (Клара_С) of kuking.net forums.

For pork chops I used:

Salads, Movies, Languages

Green bean, squash, kale, zucchini and cantaloupe salad.This is another experiment with green beans. I have to say that I still like the simplest salad the most, but one can get tired of the same thing over and over. I mixed together some green beans, zucchini shaved with vegetable peeler, “massaged” kale, fresh cantaloupe, roasted almonds, garlic, olive oil, red wine vinegar, cayenne pepper and some salt. Danya did not care for it, but I enjoyed it — even more, considering how healthy it is!

Aroshka also tried cantaloupe today — it seems that he quite liked it!

And since we normally watch movies while eating, might as well throw it in this post. We’ve finished the 3rd season of The Wire last night. It wasn’t bad, but somewhat depressing — no matter how many hydra’s heads you take off, there are always more popping up to replace them. We started watching 2nd season of the Mad Man today. I enjoy this show quite more, even though it seems like I miss half of the content. Not sure if this is the nature of the show, or if my English is not strong enough. Anyhow, it also makes me sad somewhat, but it’s witty, and I like that!

Oh, and on the subject of languages — good news for those of us who are actively bilingual. Pretty much, it strengthens the mind (not surprisingly) — an article in NY Times outlines the benefits more clearly.

And lastly, a few words about weather — it is hot and humid, and I really hate it! I wish NY summers were more like NY springs. I can only go outside with Arosha either early in the morning, or in the evening before his bedtime. Today we went out at 8 a.m., and in an hour it was so bright and hot, that our poor baby was hiding his head on my chest (I had to take him out of the stroller). We sleep with AC and today we’re actually running it all day. I think it gives Arosha a runny nose, but none of us can tolerate the temperature otherwise.

Green Beans, Corn & Feta Salad

I am in love with green beans this season. Don’t know why, but they taste just so darn good! I even opted for chicken with green beans while ordering Chinese for lunch the other day.

Green Bean Salad.Anyhow, I stumbled upon this Corn and Feta Cheese Salad last week, and decided to try it. I just HAD TO add green beans to it though, ya know? It came out pretty good — I ate it all by myself (it had 1 lb of green beans and kernels from 4 corn ears) in two settings. Now what green bean salad make do next? Any ideas?

Forshmak Pro Sandwich.Oh, and just the lunch idea for those of you who like forshmak (a.k.a. chopped herring salad) — spread it on your choice of bread, top with fresh cucumber and boiled egg slices and (this is important!) eat with some green bean salad.

Lunch Time

Lunch.While Aroshka was sleeping, I quickly fixed myself some lunch — boiled buckwheat, roasted a few chicken thighs and sweet potatoes in the oven and made this awesome green bean salad. I can’t get enough of it in the last few days!

Arosha eating green beans.It looks like Aroshka approves too. By the way, the green bean he is eating is taken directly from the salad, so it has a bit of hot pepper, garlic, olive oil and other good stuff on it. He ate a bit of buckwheat kasha as well.

Eating banana.And we finished it off with an excellent desert — a banana! Granted, Aroshka ate a miniscule amount of each food, but he had fun, and it all that counts for now.

Mango Chicken Brased in Wine

Mango chicken braised in white wine.So what do you do when you have a pack of frozen chicken thighs, a few random things in your refrigerator (such as ridiculously unripened mango and a tablespoon of leftover mandarin preserves) and a very limited time to spend by the stove due to a very active 8.5 month old who recently learned how to crawl? You throw all the stuff together in a pan, add some spices and give it a fancy name! At least, that’s what I did, and Danya asked for seconds!

To be more precise, I used:
  • 3 boneless skinless chicken thighs (thawed them first)
  • 1 mango (it was super sour)
  • 1/2 red bell pepper
  • 1/2 large onion
  • 2 garlic cloves

Chicken Caesar Salad

Chicken Caesar Salad.I think I’ve noticed this particular application while watching some TV commercial, but I am not 100% sure about this (memory could be tricky, you know). ) It does not really matter how or when, but the fact is that this weekend Danya finally installed Jamie Oliver’s 20 Minute Meals on my iPone. I love the design of the application, and there are some recipes which seem to be worth trying (although I wish there were more recipes altogether — the selection on his site is quite a bit more impressive).

Anyhow, I’ve decided to put the app to good use on Monday, and made Chicken Caesar Salad. The recipe closely resembles this one, even though he simplified the process a bit for a better time management. It did not take me quite 20 minutes though, but not too much longer than that. I liked the end result, and so did Danya! )

Fruity Chicken Salad

Fruity chicken salad.Tonight we had an easy-to-cook chicken salad for dinner, which is based on the Fruited Curry Chicken Salad recipe from allrecipes.com. It came out not bad, and I want to post it here for the future reference.

I used:
  • 3 boneless skinless chicken breasts
  • 2 celery stocks
  • 2 green onions stocks (leeks)
  • 1.5 cup of seedless grapes
  • 1/4 cup of roasted pecans
  • 1/4 lb of Swiss cheese
  • 1/3 of an apple
  • 3.5 tablespoons of mayonnaise
  • 3.5 tablespoons of plain yogurt + 2 tbs for brushing the chicken
  • 1/2 teaspoon of curry powder

Mango Salad & Herring Appetizer

Mango, avocado and cucumber saladLast week was Daniеl’s mom birthday. She cooked a lot of yummy stuff which included old time favorites like funchoza. ) I humbly participated by adding mango salad and herring appetizer to the table.

I found the mango salad recipe on Sweetlady’s blog. My salad looks a bit different than hers, but it still was pretty good and refreshing. )

Ingredients:
  • 2 medium cucumbers
  • 1 mango
  • 1 avocado
  • 2-3 tablespoons of oil
  • Juice from 1/2 lime
  • Red pepper flakes
  • Salt

Kiwi and herring appetizerI found the herring appetizer recipe on kuking.net a while ago. Basically, you spread some mayo on slightly toasted rye bred, then put a piece of marinated herring on it, and top it with a slice of kiwi fruit. Simple, but quite nice if you like herring.
