Pork Chops with Cranberries

I planned to cook pork with ginger and apples for today’s dinner, but the store was out of ginger. So I bought a bag of fresh cranberries instead (they were conveniently located underneath an empty ginger box) and figured that there must be some pork-apples-and-cranberries recipe on the net.

Meat and Potatoes Pie

Meat and Potatoes Pie.I made this pie yesterday, and it would have been gone yesterday, have I not wisely preserved part of it for tonight’s dinner. ) It came out delicious!

I used beef since lamb is not easy to find in our neighborhood. I also used young potatoes (I think they add a touch of sweetness to the filling) and a bit more spices than the recipe calls for. I will definitely make this again! Mrs. Mansurov published an excellent set of photographs illustrating the process, which made it even easier for me.

Fish & Potato Cutlets

Fish & potato cutlets.Рецепт этих альтернативных рыбных котлеток мне поведала на выходных сестра во время нашего с ней общения по Скайпу. Я, не откладывая дело в долгий ящик, приготовила их в понедельник и осталась довольна результатом.

Итак понадобятся:
  • 3-4 средних картофелины
  • 1 филе рыбы величиной с ладошку (я использовала salmon)
  • 3-4 пёрышка зелёного лука
  • 1 небольшой пучок укропа
  • 1 небольшой пучок петрушки (я заменила на кинзу)
  • 1 яйцо, отделить желток от белка
  • панировочные сухари
  • соль, перец, оливковое масло

Parmesan Crusted Chicken Breasts

Parmesan crusted chicken breast.I felt like eating chicken with potatoes last night, but for obvious reasons did not want to spend more than 45-60 minutes in the kitchen, and also kinda wanted to boldly cook that I have not cooked before. )

Raychel Ray’s Parmesan Crusted Chicken Breasts with Tomato and Basil and Potatoes with Peppers and Onions came in very handy. The dinner came out nice, just as I hoped it would. ) I followed the recipe almost to the letter — my only deviations were increased cooking time for both potatoes and chicken, and I also dipped chicken breasts in a beaten egg before rolling them in Parmesan.

Shepherd’s Pie

Shepherd's Pie.Весь вчерашний день и ночь, а так же сегодня пол дня шел снег — поэтому я работаю из дома. Вчера же я ехала на работу с Ларой – девочкой из нашего подьезда, которая работает всего на одну остановку Path Train дальше меня. Ехали мы с ней вместе первый раз (надеюсь, не последний), и очень хорошо поболтали. Она-то и подкинула мне идею вчерашнего ужина – пастуший пирог.

Звучит название весьма интригующе, а на самом деле блюдо представляет собой фарш, обжаренный с овощами и запечённый в духовке под шубой картофельного пюре. Простенько, но для будничного ужина очень даже хорошая идея (дёшево и сердито). Лара поведала мне рецепт, которым пользуется она, но я еще на всякий случай глянула на интернете — и вот этот рецепт Рэйчел Рэй оказался очень похожим на Ларисин. Continue Reading

Herring with Young Potatoes

I really like this simple, but delicious dinner a-la Russian style: young potatoes, radish salad and marinated herring.

Potatoes, herring & radish salad.For potatos: peel some young golden potatoes, boil and strain them, then add some butter, chopped garlic and dill (do not be shy with those three).

For herring: get a good quality marinated herring from the store near you, add a 2-3 tablespoons of vinegar and place thinly sliced onion rings on top.

For radish salad: chop radish, scallions and cucumbers, add a pinch of salt and a 3/4 tablespoon of sour cream.
