So I felt like eating Chilean Sea Bass tonight, but was not sure what to serve it with. I though that rice would probably go nicely with the fish, but could not come up with a good idea for a salad. I asked my Chinese coworker Vinny, who seem to enjoy cooking, for some advise. He recommended stir-frying Chinese vegetables with some Chinese sauces. As a result, I cooked eggplants with tomatoes, baby bok choy, chili garlic and black bean garlic sauces — and it came out quite tasty!
So a couple of quick notes on specifics:- Chilean Sea Bass. I just cut a fillet into 4 smaller pieces, rubbed them with a bit of sea salt, lots of dried dill, a bit of cayenne pepper and lots of flour. Then I just pan-fried the pieces on all sides until golden. The fish came out crispy outside, but soft and juicy inside.
- Rice. I fried half and onion and 2 garlic cloves for a couple of minutes, then added cumin, cayenne pepper and curry powder to the mix. Then I added washed rice, fried everything together for another minute or two, then added boiling water to the pot so it covered rice by about an inch. Let it boil on high heat for a couple of minutes, reduced heat to low, covered the pot and let it cook until ready. What I forgot to add is salt, so it came out a bit bland.
It worked quite well for me though mixed the the eggplant salad. - Fried eggplant. Sweetlady’s recipe was a starting point, but I modified it slightly. I used 2 Asian eggplants which I sliced and then quartered each slice just as she recommended. Then I fried them in a bit of olive oil for a couple of minutes. Then I threw 2 sliced tomatoes, some grated fresh ginger, 1 teaspoon of chili garlic and 2 teaspoons of black bean garlic sauces to the pan, mixed everything well and fried on medium heat for about 5-7 minutes. When everything was ready, I added sliced baby bok choy for some crunch, and cooked the mix for another minute or two.
Overall, I am happy with the end result. Of course, a lot of stuff was fried, but I used very little oil, and the meal did not leave that bad feeling in the stomach that you get after eating heavy dinner. I think I’ll cook this again in the future!
