This recipe is easy and delicious, so I thought that it would be a good idea to post it here for the future reference. The original recipe is here. I modified it slightly and here is what I did.
Pound 2 chicken breasts, rub with a bit of black pepper and stuff with the following mix:
- 1 medium sized apple, cubed
- 1/2 pack (100 gr) of extra sharp cheddar cheese, grated
- 3 teaspoons of chopped parsley
- 1/2 teaspoons of cinnamon
- 1/4 teaspoon of ground allspice
- 1/2 teaspoon of curry powder
Dip stuffed breasts into the mix of 1 bitten egg+a bit of milk+pinch of salt and then roll in breadcrumbs.
Melt 3 tablespoons of butter in the frying pan, fry rolled breasts 2-3 minutes on each side, so they will be golden.
Add 1/2 (approx 250 ml) bottle of white cooking wine to the pan, let it boil, reduce the heat and simmer chicken, turning occasionally, for 30-40 minutes.
I served it with orzo pasta and asparagus, which I simmered for a couple of minutes in the pan with chicken.
Danya liked it, and as you know, when it comes to chicken, he is somewhat picky!
